Sichuan Sesame Chicken Noodles
Ingredients
  • 200g (7 oz) fresh Chinese thin egg noodles*
  • 250g (9 oz) shredded cooked chicken (e.g. leftover roast chicken or rotisserie chicken)
  • 2 large bok choy
  • 1 cucumber, sliced
  • subheading: Spicy Noodle Sauce:
  • 1 tbsp sesame seeds
  • ¼ cup finely sliced spring onion (scallions)
  • 1 garlic clove, roughly chopped
  • 3 tbsp soy sauce
  • 1 tbsp white vinegar
  • 3 tbsp chilli oil (try my homemade Sichuan chilli oil recipe)
  • 1 tsp sesame oil
