Quinoa with Asian Flavors
Ingredients
  • 1 tbsp evoo
  • 1 C quinoa
  • 2 C chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp minced peeled fresh ginger
  • 1 clove garlic, minced
Steps
  1. Heat oil in a saucepan over medium heat until it shimmers.  Cook quinoa, stirring, until slightly browned, 2 to 3 minutes.
  2. Stir in broth, soy sauce, ginger, and garlic.  Bring to a boil over high heat, then reduce heat and simmer, covered, until all liquid has been absorbed, 20 to 25 minutes.
