- subheading: I feel compelled to report back on my turkey breast attempt before the big day comes. It was a success! The most flavorful and moist homemade turkey white meat we've ever had. I made up the recipe but the flavor was amazing and it was easy with very little mess! Here's what I did:
- 5lbs bone-in turkey breast (it came tied from the Ralph's meat counter so I left it tied)
- -sprinkle turkey with salt and pepper
- -Mix the following and rub all over the bird: Italian dressing seasoning packet, 2 Tbs maple syrup, 3 Tbs apricot jam
- -Pour into pot: 1.5 cups of low sodium chicken broth and place trivet in pot
- -place turkey on top of trivet (I put it breast side up hoping it would still work and it did!)
- -then I cut 4 TBs of butter and places it on top of the turkey. Not sure exactly why but I thought it needed a little extra fat. Next time I may put it under the skin for extra softness.
- -set on high pressure for 30 min and natural release for 15 min.
- - when it's done, take it out and let it rest. Of course I had to try right away and it was really good.
- Gravy (has an amazing flavor)
- - let the juice stay in the pot and put the pot on sauté mode.
- -mix 3 to 4 tbs cornstarch and cold water and pour that mixture into the hot turkey juice. Stir off and on for a couple minutes and allow it to thicken.
- -dunk your turkey in the gravy and taste an amazing turkey breast!
