Brussels sprout and pork belly stir fry

Ingredients
  • 1 Tbsp ghee
  • ½ onion medium diced
  • 1 lb pork belly cut in small chunks
  • ½ lb Brussels sprouts cut into quarters
  • 2 garlic cloves minced
  • Salt & Pepper to taste
Steps
  1. 1.  Melt ghee in heavy skillet
  2. 2.  Sauté onions 3 mins med high temp
  3. 3.  Add pork belly and continue to cook till pork is done. Remove from heat drain fat and reserve it.
  4. 4.  Add Brussels sprouts to mixture with some of the fat reserve and fry till almost done then add garlic cook for a few morel mins then add  salt and pepper and serve.
