  • 1 to 2 cups fresh pineapple chunks

  • one 14-ounce can full fat coconut milk
  • 1 ½ cups water
  • 2 cups jasmine rice
  • subheading: Toppings:
  • lime zest
  • cilantro
  • thinly sliced jalapeño
  • crunchy onions
