Ingredients
  • 110g Ground Almonds
  • 15g Coconut Flour
  • 1 tsp Baking Powder
  • Scant ½ tsp xantham gum, too much and your rock cakes will be chewy!
  • Pinch of salt
  • ½ tsp Mixed spice or cinnamon (optional, not essential)
  • 20g Brown granulated sweetener (and more for sprinkling on the top after baking)
  • 50g butter, cubed
  • 15 to 25g dried fruit - I used 15g sultanas and 10g dried cranberries (cut in half), but dried prunes work well and are usually lower carb than sultanas
  • 1 med/large egg
  • 30ml milk or cream (I used almond milk)
  • 1 tsp vanilla extract
