Barley and Mushroom Pilaf
Ingredients
  • 1 cup barley, rinsed well
  • 4 cups vegetable stock, mushroom stock or bone broth
  • ½ cup fresh shiitake mushrooms, sliced or ½ oz (14g) dried sliced shiitake mushrooms
  • 1 ½ cups yam, coarsely chopped
  • 1 bunch kale, destemmed and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ¼ tsp fresh ground black pepper
  • 1 cup cashews chopped
  • 1 tbsp coconut oil
