- ½ cup lukewarm water
- ¼ cup butter
- ½ to ¾ cup milk ½ cup for spelt flour, ¾ for wheat flour
- ⅓ cup honey
- ½ tsp salt
- 1 tsp grated lemon rind
- 1 egg beaten
- ¾ cup raisins
- 3 ½ to 4 cups flour spelt, all-purpose, or an all-purpose/whole wheat combination
- Crosses
- 2 tbsp white flour all-purpose or white rice flour, spelt can also be used but crosses will be darker
- 2.5 tbsp water
- ¼ tsp vanilla
- Hot Cross Bun Glaze
- 1 tbsp milk
- 1 tsp honey
