Instant Pot Breakfast Burritos

Ingredients
  • 6 breakfast sausage patties, cooked & chopped
  • 10 large eggs
  • ¾ cup finely shredded sharp cheddar cheese
  • 2 tbsp heavy whipping cream
  • 12 tortillas
  • Salt and Pepper to taste
Steps
  1. 1.) Brown and chop sausage patties.
  2. 2.) Spray ice-bar molds with cooking spray.
  3. 3.) Evenly divide chopped sausage between each well in ice-bar mold.
  4. 4.) Sprinkle one tablespoon shredded cheddar into each well over sausage.
  5. 5.) Beat 10 large eggs with heavy whipping cream with a fork until smooth.
  6. 6.) Mix in salt and pepper to taste. (I find no extra salt is needed due to the sausage and cheese.)
  7. 7.) Evenly divide eggs between each well in the molds, about ⅓ cup each.
  8. 8.) Cover each mold tightly with foil that’s been sprayed with cooking spray.
  9. 9.) Cook, separated by trivets*, in IP for 8 minutes on High Pressure, then 10 minute NR.
  10. Serve with toppings of your choice (I like avocado and salsa) on warmed tortillas.
Notes
  • *Note: If the trays are stacked and not separated, the centers will not cook.
  • Store in refrigerator for quick use, or individually wrapped with plastic wrap in the freezer for later use. Heats well in the microwave.
