Ingredients
  • 1 pound chicken (whichever pieces you like)
  • 2 tsp vegetable oil (+ a bit more if using the baking sheet)
  • 2 tbsp cumin
  • 5 to 8 threads of saffron crushed
  • 1 tsp turmeric
  • 1 tsp cilantro - fresh or dried
  • ½ onion
  • ½ preserved lemon OR fresh lemon
  •  
  • 1 cup chicken broth if using dutch oven
  • subheading: Ras al Hanout Carrots:
  • 1 pound medium-sized whole carrots
  • 2 Tablespoons olive oil (vegetable oil is ok if that's what you have)
  • 2 garlic cloves, minced
  • 2 tsp ras al hanout
  • Salt and pepper to taste
  • Optional: Parsley or Chives for garnish

  • You don't need to have ALL of these spices but it's advisable to have 8 to 10 of them.

  • 2 teaspoons ground ginger
  • 2 teaspoons ground mace
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon coriander seeds
  • 1 teaspoon ground nutmeg
  • 1 teaspoon turmeric
  • ½ tsp ground black pepper
  • ½ tsp ground white pepper
  • ½ teaspoon ground cayenne pepper
  • 2 to 3 star anise pods
  • ¼ teaspoon ground cloves
  • 2 teaspoons dry cardamom
  • ¼ tsp nigella seeds
  • ¼ tsp caraway seeds
  • ¼ tsp fennel seeds
  • 5 to 10 threads of saffron
  • 3 to 5 dry rosebud petals
