Ingredients
- 1 onion, diced or equivalent trinity
- 20 oz choice of mushrooms, sliced
- ½ teaspoon ground thyme
- ½ teaspoon liquid amino or coconut amino
- 1 teaspoon salt substitute, Mrs Dash
- 8 oz no-salt stock
- 1 tablespoon arrowroot or tapioca flour or cornstarch
- Dash of fresh ground black pepper
- Pinch of garlic powder
- 1 cup of milk
- Garnish of sliced green onion and chopped fresh parsley
Steps
- Sweat the onions over med high heat for 5 minutes. Add the mushrooms for an additional 5 minutes.
- Add the Thyme, lower to simmer and allow to continue for 10 minutes. You want some liquid to develop.
- Add the salt substitute and liquid amino. Stir the arrowroot into the cool stock and add it to the pot. Bring to a simmer for 15 minutes. Add pepper and garlic powder.
- Add the milk, return to heat, and serve.
- Garnish each bowl with green onion and parsley.
