Mushroom Soup
Ingredients
  • 1 onion, diced or equivalent trinity
  • 20 oz choice of mushrooms, sliced
  • ½ teaspoon ground thyme
  • ½ teaspoon liquid amino or coconut amino
  • 1 teaspoon salt substitute, Mrs Dash
  • 8 oz no-salt stock
  • 1 tablespoon arrowroot or tapioca flour or cornstarch
  • Dash of fresh ground black pepper
  • Pinch of garlic powder
  • 1 cup of milk
  •  
  • Garnish of sliced green onion and chopped fresh parsley
Steps
  1. Sweat the onions over med high heat for 5 minutes. Add the mushrooms for an additional 5 minutes.
  2. Add the Thyme, lower to simmer and allow to continue for 10 minutes. You want some liquid to develop.
  3. Add the salt substitute and liquid amino. Stir the arrowroot into the cool stock and add it to the pot. Bring to a simmer for 15 minutes. Add pepper and garlic powder.
  4. Add the milk, return to heat, and serve.
  5. Garnish each bowl with green onion and parsley.
