Keto - Caribbean Pork Stew INSTANT POT
Spicy, rich and very satisfying!  Omit jalapenos and use regular salt if you like it less spicy.  You can also use sour cream if you don't have heavy whipping cream (HWC) on hand.

Ingredients
  • 3 lb cubed pork (chops, shoulder, etc) or boneless chicken thighs
  • 1 large onion, rough diced/sliced
  • 5 cloves garlic, minced
  • 2 cans diced tomatoes
  • 1 can green chilis
  • 1 can jalepenos
  • 1 tablespoon Zatarain's or Tony Chachere Cajun Salt
  • 1 tablespoon Allspice
  • 2 teaspoons dried Thyme
  • 1 teaspoon ground Turmeric
  • 1 cup heavy whipping cream
  • 1 pound fresh baby spinach leaves
  • Cilantro (optional)
Steps
  1. Pour tomatoes and chilis into the Instant Pot liner
  2. Top with diced onions, minced garlic, and cubed pork
  3. Sprinkle with Tony Chachere, allspice, thyme, and turmeric
  4. After checking lid seal, pop-up and vent, close/lock Instant Pot
  5. Select "meat" for 20 minutes
  6. Allow natural pressure release when done
  7. Add heavy whipping cream and mix
  8. Add baby spinach and mix until wilted
  9. Serve topped with cilantro
