Lemon Herb Quinoa
Ingredients
  • 2 C water
  • 1 C quinoa, rinsed
  • ½ tsp salt, divided
  • 1 tbsp minced fresh basil
  • 1 tbsp minced fresh cilantro
  • 1 ½ tsp minced fresh mint
  • 1 tsp grated lemon peel
Steps
  1. In a small saucepan, bring water to a boil.  Add quinoa and ¼ tsp salt.  Reduce heat, cover and simmer for 12 to 15 min or until liquid is absorbed.
  2. Remove from heat. Add remaining ingredients, fluff with a fork
