Hummingbird Sheet Cake

I love to cook and I love to try different foods, my husband and I usually have a garden every summer so I put up/can lot of my tomatoes and green beans. We love to eat fresh veggies and share when we have plenty!

2 ¾ cups unbleached cake flour

2 tsp. baking powder

2 tsp. ground cinnamon

½ tsp. kosher salt

½ tsp. baking soda

1 ⅓ cups granulated sugar

¾ cup unsalted butter, softened

3 large eggs, at room temperature

1 ¼ tsp. vanilla extract

2 small bananas, mashed (about ⅔ cup)

1 ( 8-oz.) can crushed pineapple in juice, undrained

1 cup roughly chopped toasted pecans

subheading: Cream Cheese Frosting:

½ cup unsalted butter, softened

1 ( 8-oz.) pkg. cream cheese, softened

1 ¼ tsp. vanilla extract

2 cups plus 2 Tbsp. powdered sugar, sifted

⅛ tsp. kosher salt

subheading: Additional Ingredients:

Dried pineapple rings

White pearl candy sprinkles

Fresh mint leaves
