Fun Facts:

❤️ Country-style ribs are not really ribs. They are really pork chops, more meaty and less fatty than real ribs, and should be cooked like chops, not ribs.

❤️ Country-style ribs are cut from the blade end of the loin close to the pork shoulder. They are meatier than other rib cuts. They contain no rib bones, but instead contain parts of the shoulder blade (scapula).

Ingredients

  • 1½ teaspoons salt
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • 1½ teaspoons paprika
  • 1 teaspoon pepper
  • ¼ teaspoon cayenne pepper (remove if you have issues with spiciness)
  • 2 green onion, chopped

  • 2 to 4 pounds country-style ribs
  • ¾ cup apple juice
  • ⅔ cup BBQ sauce, plus more for serving

  • For BBQ sauce, I use ⅓ yellow mustard + ⅓ honey + ⅓ KC Masterpiece but you can use what you like.
Steps
  1. Combine all rub ingredients in a large bowl.
  2. Sprinkle the rub over all sides of the ribs and rub it in--Wrap and refrigerate for 2 to 8 hours.
  3. Place apple juice into a 6-quart or larger Instant Pot.
  4. Add ribs. Pour BBQ sauce over ribs.
  5. Add chopped green onion to top of ribs.
  6. Set to Pressure Cook on high for 40 minutes. Make sure the valve is in sealing position.
  7. Do a natural pressure release for 15 minutes and then manually release the remaining pressure.
  8. Carefully remove ribs from the Instant Pot and place them on a rimmed baking sheet lined with foil.
  9. Drizzle them with more BBQ sauce and broil them until they start to get bubbly and slightly charred.
