Autumn Minestrone

1 onion chopped

1 clove garlic chopped

1 sweet potato cubed (or butternut)

3 carrots cubed

1 fennel bulb cubed

2 green capsicums cubed

1 cup frozen corn

1½ cups frozen peas

1 can kidney beans

1 can no-added-salt canned diced tomatoes

½ cup passata

300 ml water

2½ cups long grain rice white cooked

1 chicken stock cube

1 tbs smoked paprika

1 tbs ground paprika

1 tbs dried oregano

1 tbs dried marjoram

7 fresh basil leaves finely sliced

500 ml water

½ tsp raw sugar

½ tsp chilli paste

¼ cup cold pressed olive oil

1 tbs tomato paste

½ tsp sea salt and cracked pepper

Parsley finely chopped

zest and juice of 1 lemon
