Sweet Corn and Black Bean Succotash
Ingredients
  • 1 cup dry black beans, soaked*, or 1 15-ounce can black beans, rinsed and drained
  • 4 ears corn, shucked and rinsed
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 medium red onion, diced (about 1 cup)
  • 1 red bell pepper, diced (about 1 cup)*
  • 2 garlic cloves, minced
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • pinch cayenne pepper
  • 2 tablespoons champagne vinegar or white wine vinegar
  • ¼ cup coarsely chopped cilantro
