Vegan Kabocha Squash Queso
Ingredients
  • 1 kabocha squash
  • 4 tbsp olive oil
  • 1 large shallot, chopped
  • 1 jalapeño, deseeded and chopped
  • 2 cloves of garlic
  • 1 ½ tbsp nutritional yeast
  • 2 tsp ground cumin
  • ¼ cup of raw sunflower seeds
  • 2 tsp dijon mustard
  • 1 tsp tamari sauce
  • ½ tsp light miso
  • water for blending
  • 2 tablespoons of pickled jalapeño juice (from the jar)
  • ¼ cup chopped pickled jalapeños
  • sea salt and pepper to taste
  • 2 tablespoons of grapeseed or coconut oil
