Instant Pot Summer Chili

Ingredients
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 28 ounces tomato sauce
  • 28 ounces tomatoes, diced
  • 1 large green bell pepper diced
  • 1 large red bell pepper diced
  • 1 large sweet onion chopped
  • 8 ounces mushroom caps, sliced
  • 1 medium zucchini (9oz), chopped
  • ½ cup corn
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon hot sauce (8 shots)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
Steps
  1. Heat the oil on medium saute.
  2. Add the ground turkey and saute until no longer pink.
  3. Add everything else.
  4. Cook on high pressure for 12 minutes.
  5. Natural pressure release for 15 minutes. Done!
  6. Top with grated cheese, sour cream and/or sliced avocado if desired.
