Crispy Rice with Jalapeño Tuna
Ingredients
  • One 6.4-ounce box Mexican style rice, such as Rice-A-Roni Mexican Style
  • Olive oil cooking spray, for the rice
  • 1 cup fresh cilantro, finely chopped
  • 1 tablespoon Japanese-style mayonnaise
  • ½ teaspoon chipotle in adobo sauce
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • 2 scallions, whites finely chopped, greens thinly sliced
  • 1 clove garlic, grated
  • 1 jalapeño, seeded and finely chopped
  • 1 lime, zested and cut in half for juicing, plus optional lime wedges for serving
  • Kosher salt and freshly ground black pepper
  • 8 ounces sushi-grade tuna, cut into ⅛-inch pieces
  • 1 serrano chile, thinly slice
