12 Days of Christmas Cookie Platter

Ingredients
  • subheading: Wet ingredients:
  • 1¼ cups firmly packed brown sugar*
  • ¾ cup creamy peanut butter
  • ½ cup Crisco all-vegetable Shortening
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp warm water)
  • 3 tbsp plant-based milk (I used soy)
  • 1 teaspoon vanilla extract
  •

  • 1¾ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
Steps
  1. Heat oven to 375°
  2. Mix the ground flaxseed in warm water. Set aside for at least 10 minutes.
  3. In a medium bowl, mix together the "Dry ingredients" while waiting for the flax egg to become congealed.
  4. When the time is up, place all the "Wet ingredients" in a mixing bowl and beat until nice and smooth.
  5. Gradually blend in the "Dry ingredients" mix until just incorporated. Don't overmix.
  6. Roll into 1 tablespoon balls and place on a baking sheet with parchment paper or a silicone baking mat. Flatten slightly using a fork to create the traditional criss-cross pattern.
  7. Bake for 7 to 8 minutes and then remove from the oven and allow to sit on the sheet for 2 minutes before moving to a wire rack.
