Ingredients
- subheading: Wet ingredients:
- 1¼ cups firmly packed brown sugar*
- ¾ cup creamy peanut butter
- ½ cup Crisco all-vegetable Shortening
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp warm water)
- 3 tbsp plant-based milk (I used soy)
- 1 teaspoon vanilla extract
- subheading: Dry Ingredients:
- 1¾ cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
Steps
- Heat oven to 375°
- Mix the ground flaxseed in warm water. Set aside for at least 10 minutes.
- In a medium bowl, mix together the "Dry ingredients" while waiting for the flax egg to become congealed.
- When the time is up, place all the "Wet ingredients" in a mixing bowl and beat until nice and smooth.
- Gradually blend in the "Dry ingredients" mix until just incorporated. Don't overmix.
- Roll into 1 tablespoon balls and place on a baking sheet with parchment paper or a silicone baking mat. Flatten slightly using a fork to create the traditional criss-cross pattern.
- Bake for 7 to 8 minutes and then remove from the oven and allow to sit on the sheet for 2 minutes before moving to a wire rack.
Notes
- *If you're looking for a bone char free brown sugar, buy any organic brand. I have personally used Wholesome and Woodstock and like them both equally.
