Beef enchiladas
Not New Mexican
Ingredients
  • 1 onion chopped
  • ⅓ Green Bell pepper chopped
  • 1 tbls oil
  • 1 lb ground beef
  • 1 can red or green enchilada sauce (normal sized can, not the big or small)
  • 1 lb Mexican cheese blend (as desired)
  • 10 to 12 medium sized flour tortillas
Steps
  1. Sautee onions and bell pepper in oil for 3 to 5 mins, then add beef and cook until brown
  2. Preheat oven to 375
  3. And half the sauce to the meat and saute 5 to 10 mins
  4. Spray a casserole dish with non stick spray
  5. Roll enchiladas with cheese and then a scoop of the mixture. Fit as many as possible into your pan, so plan accordingly
  6. Top with the rest of the sauce and then add much cheese as desired
  7. Cook 20 mins
