Mushroom & sun-dried tomato stuffed chicken

Ingredients
  • 4 chicken breasts
  • 1 cup mushrooms, diced
  • 1 packet sun-dried tomato (no oil), chopped
  • 2 cups baby spinach, chopped
  • ½ cup cheese (parmasen, mozzarella, feta or goats cheese work)
  • 1 TBS Italian herbs
  • Olive oil
  • Salt & pepper
Steps
  1. 1. Preheat oven to 180. Heat oil in fry pan and sauté mushrooms and tomatoes.
  2. 2. Add spinach and cheese to a bowl. Add sauté mix and Italian herbs and mix.
  3. 3. Slice chicken breast to create a cavity and add mixture. Pop on baking tray lined with baking paper. Drizzle with olive oil and season with salt and pepper.
  4. 4. Cook for 40 mins. Let rest for 5.
