White Wine Risotto with Shitake Bacon
Ingredients

  • 2 tablespoons Bragg’s Liquid Aminos (or tamari, soy sauce)
  • 2 teaspoons olive oil
  • 2 teaspoons liquid smoke
  • 1 pound shitake mushrooms, stems removed and sliced ¼ inch thick

  • 1 ½ cups Arbrorio rice
  • 3 cups vegetable broth
  • ½ cup cashews, soaked in water over night
  • 1 cup water
  • 2 teaspoons nutritional yeast flakes
  • 1 medium yellow onion, finely diced *
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 ½ cups dry white wine
  • 3 tablespoons lemon juice
  • Salt and pepper, to taste
