Sweet Potato & Black Bean Taquitos
Ingredients
  • 2½ to 3 cups chopped sweet potatoes (about 1 large or 2 medium sweet potatoes)
  • 1 cup chopped carrots (about 3 medium carrots)
  • 3 cloves garlic, minced
  • 1 cup chopped red onion
  • 1½ cups cooked black beans
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika or smoked paprika
  • ½ teaspoon ground turmeric
  • ¼ teaspoon black pepper
  • 12 to 14 small corn tortillas
  • Cashew Cream (optional)
  • Avocado (optional)
