Braised Beef Stew
Ingredients
  • ¼ cup molasses
  • ¼ cup soy sauce
  • 1 tablespoon grated peeled fresh ginger (from 1 [2-inch] piece)
  • 3 large garlic cloves, grated (about 1 ½ teaspoons)
  • 1 (2-pound) boneless chuck roast, cut into 1-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 2 small cinnamon sticks
  • 1 sweet onion (such as Vidalia), coarsely chopped (about 2 ¼ cups)
  • ¼ cup tomato paste
  • 6 cups unsalted beef stock
  • 2 carrots, peeled, halved lengthwise, and thinly sliced (about 1 ½ cups)
  • 4 cups chopped mustard greens (from 1 medium bunch)
  • 1 (14.5-ounce) can diced tomatoes (undrained)
  • 2 tablespoons mirin
