Chicken Salad Grain Bowls
Ingredients
  • 2 cups rotisserie or leftover grilled chicken, chopped
  • 1 large carrot, peeled and grated
  • ½ red onion, diced or chopped
  • 2 green apples, diced
  • 4 Tbsps fresh parsley leaves, chopped
  • handful of raw pecans or walnuts, chopped
  • sea salt and ground pepper, to taste
  • 2 cups cooked brown rice or quinoa
  • ¼ cup raisins
  • dollop of Greek yogurt if desired
  • subheading: Dressing:
  • juice of 1 fresh lemon
  • 2 tsps fresh lemon zest
  • 2 Tbsps extra virgin olive oil
  • 1 fresh garlic clove, minced
