Shrimp Broccoli Scampi with Linguini
Ingredients
  • 2 broccoli crowns, cut into florets (~7 cups)
  • 1 package (12- to 16-ounce box) whole-grain spaghetti or linguine
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 pound raw shrimp, peeled and deveined
  • 1 pint cherry or grape tomatoes, halved
  • ¾ teaspoon kosher salt
  • ¼ cup lemon juice
  • 2 tablespoons chopped parsley, basil or other fresh herbs (optional)
