Molten Chocolate and Salted Peanut Butter Mousse…
Ingredients
  • 200g plain flour
  • 85g icing sugar
  • 85g cold butter, cut into cubes
  • 2 egg yolks, plus 1 egg yolk whisked with 1tsp of water to glaze the pastry
  • whipped cream or crème fraîche, to serve (optional)
  • 6 x 9 to 10cm x 2.5cm deep loose- bottomed fluted tart tins
  • subheading: For the filling:
  • 100g dark (70 per cent cocoa) chocolate with sea salt, broken into pieces
  • 15g butter
  • 3 eggs (1 separated)
  • 125g caster sugar
  • 1tbsp cocoa powder, sifted
  • 1tsp plain flour
  • 3 to 4tbsp smooth peanut butter
  • icing sugar, to dust
  • subheading: For the peanut ice cream:
  • 300ml whipping cream
  • 250ml full cream milk
  • 150ml clear honey
  • 1tbsp smooth peanut butter
  • 2 whole eggs, plus 2 egg yolks
  • 150g roasted salted peanuts
