IP Beans - BlackEye Peas
Blackeye Peas cooked in less than an hour using the Instant Pot.
Ingredients
  • Olive oil
  • ½ onion, diced
  • 12 oz dried blackeye peas, sorted and rinsed, unsoaked
  • 4 cups water (more if you like soupy beans)
  • salt
  • pepper
  • Smoked Paprika (optional)
Steps
  1. Add a splash of oil to the Instant Pot liner.
  2. Select "saute'" and adjust to "less"
  3. When oil is hot, add diced onion
  4. Saute' onions until about ½ way done.
  5. Add 4 cups of water
  6. Add dried beans
  7. Select "beans" or "manual" and adjust time to 25 minutes.
  8. When pressure cooking time is completed, allow a natural pressure release if you have time.  If you use quick pressure release, do so with extreme caution as beans are a food that may froth.
  9. Add spices as desired.  Smoked paprika is good to add for a smoky flavor when you don't have ham or bacon cooking with the beans.
Notes
  • If using 16 oz (1 pound) bag of blackeye peas, increase the water to 6 cups.
  • This recipe took less than one hour including prep, heating (9 minutes), cooking (30 minutes) and natural release (16 minutes).
  • I cooked this for 30 minutes and they were almost too done.  I reduced the time in the recipe to 25 minutes.
  • There was very little liquid left when using 4 cups of water and 12 ounces of dried beans.  I added an annotation to the recipe to increase the water for more soupy beans.
  • My 6 quart IP could have easily cooked the entire 24 ounce bag of dried blackeye peas.
