Mini Glazed Lemon Cake
Ingredients
  • ½ cup butter or one stick, softened
  • ¼ cup honey
  • ½ cup granulated sugar
  • 2 eggs
  • 1 cup flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp kosher salt
  • ½ cup buttermilk
  • 2 lemons zested and juiced
  • 2 tsp vanilla extract
  • For buttercream center: 4 tablespoons butter, 1 tablespoon cream/milk, 1 ½ cups confectioners sugar, 1 tsp vanilla extract. Use a stand up or hand held mixer. Beat for about 4 or 5 minutes - until creamy.
  • For glaze: 1 ½ cups confectioners sugar plus 2 tablespoons milk. Whisk until lumps have dissolved. Pour over slightly warm cake. a
