Bruschetta Chicken & Zoodles

Ingredients
  • Chicken marinate
  • 4 boneless skinless chicken breasts
  • 2 garlic cloves, minced
  • 2 tbsp Italian seasoning
  • 1 tbsp olive oil
  • Salt & pepper to taste
  •  
  • Bruschetta
  • Roma tomatoes, diced
  • ¼ cup diced red onion
  • 1 garlic clove, minced
  • ½ lemon, juiced
  • 1 tbsp Italian seasoning
  • 4 tbsp reduced fat parmesan cheese.
  •  
  • 2 packages frozen zucchini noodles
  • 1 tsp teriyaki
Steps
  1. Marinate chicken breasts. Let sit for 10 minutes.
  2. Prepare the bruschetta mixture and set aside.
  3. Grill the chicken breasts until done.
  4. While chicken is grilling, prepare your Zoodles in a skillet. Session as desired.
  5. When finished, spoon Zoodles on a plate, top with chicken and bruschetta mixture. Sprinkle with additional Parmesan cheese and drizzle with teriyaki.
Notes
  • Serves 4 at 2 points each on blue or purple.
