Gluten Free, Paleo & Keto Double Chocolate Muffins
Ingredients
  • ½ cup almond flour
  • ¼ cup golden flaxseed meal finely ground
  • 1 teaspoon baking powder
  • 5 tablespoons unsalted grass-fed butter or 4 TBS coconut oil 1 TBS coconut cream
  • ⅓ to ½ cup xylitol *or coconut sugar if paleo (we use ⅓ cup)
  • ⅓ cup cocoa powder **
  • ¼ teaspoon kosher salt
  • ¼ teaspoon espresso powder or instant coffee (optional)
  • 2 eggs at room temperature***

  • 1.8 to 2.8 ounces Lily's Sweets dark chocolate bar to taste
  • 1.8 to 2.8 ounces pecans or walnuts
  • flakey sea salt to garnish
