Mexican Street Corn
Ingredients
  • 4 ears of corn
  • Mexican crema or less desirable Mayonnaise
  • Chili Powder and smoked paprika
  • Cotija cheese
  • Cilantro, chopped
  • Lime
Steps
  1. Shuck the corn, grill until slightly charred all over.
  2. Spread a schmear of crema or mayonnaise on the corn. Sprinkle with chili powder and smoked paprika. Top with crumbled Cotija cheese, sprinkle with chopped cilantro. Serve with lime wedges.
