❤️ MY FAV ❤️ Chef Eileen's Pineapple Bread
I adapted recipe from ChocolateCoveredKatie.com 's Healthy Banana Bread and Cranberry Orange Bread.

I made with quinoa flour & put in 2 loaf pans. Baked in microwave. It was tasty, but drier than I prefer.FREEZER.

Taste, texture, MUCH BETTER 2nd day.
Ingredients
  • 2 cups quinoa flour (OR spelt OR oat)
  • 1 tsp baking soda
  • ¾ tsp baking powder

  • subheading: ½ cup shredded coconut:
  • subheading: walnuts, crushed:
  • subheading: raisins OR sweet cherries, dried:
  • subheading: dark chocolate chips, Enjoy Life:
  • subheading: ¼ tsp coconut extract:
  • subheading: THEN, ADD LAST REMAINING:
  • 1 ½ cups overripe mashed banana
  • ½ cup crushed pineapple, drained
  • (IF MICROWAVING, ADD SOME LIQ.)
  • ½ cup maple syrup OR honey, agave
  • 6 TAB plant milk (OR coconut milk)
  • 2 tsp vanilla extract
