  • 1 teaspoon dried thyme
  • Roast
  • 1 large onion, sliced
  • 3 to 4 cloves garlic, minced
  • 28 oz diced tomatoes (canned or fresh)
  • 3 cups vegan chicken or vegetable broth (see note 2)
  • Optional Sauce (see note 3)
  • 6 oz tomato paste
  • 3 tablespoon apple cider vinegar
  • 2 tablespoon reduced sodium soy sauce (or Less Sodium NoSoy if soy-free)
  • 1 tablespoon maple syrup or agave
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
