Keto Shepherds Pie

Ingredients
  • subheading: Filling:
  • 500g lean lamb mince
  • 150g celery
  • 250g mushrooms
  • 75g shallots
  • 15g double concentrated tomato puree
  • 1 to 2tsp oil
  • 1tsp paprika
  • ½Tbsp dried thyme
  • ½Tbsp dried rosemary
  • 1 lamb (or beef) stock cube
  • salt and pepper to taste

  • subheading: Cauliflower mash:
  • 360g cauliflower florets (about 1 small head)
  • 40g grated Parmesan cheese
  • 15g butter (you can add more if you have calories for it)
  • 2 egg yolks
  • salt and pepper to taste
Steps
  1. subheading: Cauliflower mash:
  2. Microwave/steam/boil the cauliflower till tender
  3. Add butter and blend in a food processor tills smooth
  4. Add the egg yolks and cheese and season
  5. Blend till smooth
  6. subheading: Meat filling:
  7. Dice mushrooms, celery and shallots.
  8. Preheat your frying pan really well (I prefer to use cast iron).
  9. Add 1tsp oil and fry the meat until golden - do it in batches for the best results. Put the meat aside and reduce heat.
  10. Add 1tsp oil and and fry the shallots till golden brown. Add celery and mushrooms and sweat them until half way through.
  11. Add back the lamb.
  12. Add in a beef stock cube, tomato puree and spices.
  13. Add about 300ml of water and cook for about 10 minutes.
  14. If there is too much liquid left you can thicken it with xanthan gum (no more ¼ tsp at once) or flax meal (no more ½ tsp at once.)
  15. Add to a large oven safe dish, cover with cauliflower mash and bake for 15 minutes at 200C in an oven.
