Ingredients
- subheading: Filling:
- 500g lean lamb mince
- 150g celery
- 250g mushrooms
- 75g shallots
- 15g double concentrated tomato puree
- 1 to 2tsp oil
- 1tsp paprika
- ½Tbsp dried thyme
- ½Tbsp dried rosemary
- 1 lamb (or beef) stock cube
- salt and pepper to taste
- subheading: Cauliflower mash:
- 360g cauliflower florets (about 1 small head)
- 40g grated Parmesan cheese
- 15g butter (you can add more if you have calories for it)
- 2 egg yolks
- salt and pepper to taste
Steps
- subheading: Cauliflower mash:
- Microwave/steam/boil the cauliflower till tender
- Add butter and blend in a food processor tills smooth
- Add the egg yolks and cheese and season
- Blend till smooth
- subheading: Meat filling:
- Dice mushrooms, celery and shallots.
- Preheat your frying pan really well (I prefer to use cast iron).
- Add 1tsp oil and fry the meat until golden - do it in batches for the best results. Put the meat aside and reduce heat.
- Add 1tsp oil and and fry the shallots till golden brown. Add celery and mushrooms and sweat them until half way through.
- Add back the lamb.
- Add in a beef stock cube, tomato puree and spices.
- Add about 300ml of water and cook for about 10 minutes.
- If there is too much liquid left you can thicken it with xanthan gum (no more ¼ tsp at once) or flax meal (no more ½ tsp at once.)
- Add to a large oven safe dish, cover with cauliflower mash and bake for 15 minutes at 200C in an oven.
