Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 1 medium red onion, chopped
  • 1 yellow, orange, or red pepper, chopped
  • 2 stalks celery, chopped
  • 2 carrots, peeled and chopped
  • 4 cloves of garlic, minced
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1-28 ounce can whole or diced tomatoes with juice
  • 2-15 ounce cans black beans, rinsed
  • 1-15 ounce can pinto beans, rinsed
  • 1 cup vegetable broth or water
