One-Pot Quinoa Chili
Ingredients
  • 2 teaspoons olive oil
  • 1 onion , chopped
  • 3 cloves garlic , minced
  • 1 can (156 mL) tomato paste
  • 2 tablespoons ground cumin
  • 1 tablespoon each chili powder and smoked paprika
  • 4 cups vegetable broth
  • 1 can (796 mL) diced tomatoes
  • ¾ cups quinoa , rinsed
  • 1 can (540 mL) black beans , drained and rinsed
  • 1 can (540 mL) kidney beans , drained and rinsed
  • 1 cup frozen corn
  • 3 tablespoons fresh cilantro , chopped
  • 1 teaspoon pepper
  • ½ teaspoon salt (optional)
