Ingredients
  • 1 Whole Egg
  • ⅓ tsp Dried Mustard
  • 3 tsp Lemon Juice or ACV
  • ⅛ tsp Sea Salt, Celtic or Himalayan
  • ¾ cup Olive Oil or Macadamia Oil
Steps
  1. Blend the egg with a blender for 30 seconds, and add ⅓ to ½ tsp mustard, according to taste.
  2. The egg should be light coloured when blended and very bubbly.
  3. Add the lemon juice or ACV and Sea Salt or Fine Himalayan Salt and blend for another 15 seconds. If you use Himalayan or Celtic Salt please keep in mind, they are very beneficial for our Health and also pretty strong tasting, so in any Recipe, you will need to use less of them. Commercial Table Salt is Toxic, due to chemicals used in manufacture.
  4. For Aioli: add 1 to 2 Cloves of Garlic instead of Dried Mustard. Add it for the last 10 seconds of the blender time. Make sure to press it first or cut it fine.
  5. For Tartar Sauce: add 1 to 3 finely diced Gherkins and a small amount of Capers, Chives and Parsley and a pinch of Cayenne (each according to taste) Always be Very Careful when using Cayenne in any Recipes -
  6. it is extremely hot.
  7. For Herby Mayo: you can add a little Basil or Cilantro with or without 1 small Clove of Garlic.

  9. Turn the food processor on and pour the oil in slowly as a thin drizzle for the first third and twice as fast for the final two-thirds. You can stop adding the oil if your mayonnaise is at the consistency that you like. Add more oil if you want a thicker mayonnaise.
  10. If you wish, add more lemon juice or salt to taste.
  11. Since this Recipe has a raw egg in it, it's best to make a new batch in 3 or 4 days if needed.
  12. Try to use the freshest eggs that you can.
Notes
  • I like to always use Healthy Ingredients, Natural, and Organic when I can affordably, to Benefit our Health.
  • There are so many Marketing Ploys out there these days by Misleading Manufacturers who have nothing better to do than wreck our Health, just to make their so-called "Healthy Products" stay on the shelves as long as possible.
  • And as for Canola, according to Genuine Researchers in recent years, it's a great Con-ola. So are those "Polyunsaturated" Seed Oils, SOY and Corn Oil. It would make you shudder if you knew how each one of these Oils including the Canola are manufactured - Cheap and Nasty!
  • So you are doing the right thing for your family by making your own Homemade Mayonnaise and Dressings. That's for sure!
