Lemongrass and Coconut Chicken Curry
Ingredients
  • 2 teaspoons peanut oil
  • 8 small chicken thigh cutlets, skin-on
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2cm piece fresh ginger, finely grated
  • 1 stalk lemongrass (white part only), finely chopped

  • 1 long red chilli, thinly sliced
  • 400ml can light coconut cream
  • 1 ½ tablespoons fish sauce
  • 2 green onions, thinly sliced
  • 1 ½ cups bean sprouts
  • ½ cup fresh coriander leaves
  • 4 cups steamed jasmine rice, to serve
