Harissa, Smoked Salmon and Chive Muffins
Ingredients
  • 1 egg, beaten
  • 1 cup (250ml) milk
  • ¼ cup creme fraiche, plus extra to serve
  • ⅓ cup (80ml) extra virgin olive oil
  • 2 tsp harissa
  • 2 cups (300g) self-raising flour, sifted
  • 100g smoked salmon, roughly chopped plus 100g, sliced
  • ½ bunch chives, finely chopped, plus extra to serve
  • Lemon zest, to serve
