Spiced Swede and Carrot Soup with Chimichurri
Ingredients
  • 3 large carrots, chopped
  • 400g swede, peeled and chopped
  • 3 tbsp olive oil
  • 1 tsp ground coriander
  • ½ tsp ground turmeric
  • 1 onion, roughly chopped
  • 1 celery stick, roughly chopped
  • 15g fresh ginger, peeled and grated
  • 3 garlic cloves, crushed
  • 1 vegetable stock pot, made up to 1.2ltrs
  • 20g fresh coriander, leaves picked and finely chopped
  • 20g fresh parsley, leaves picked and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 2 tbsp red wine vinegar
