Roast Turkey
Ingredients
  • 12 to 16 pound whole turkey, giblets included
  • 1 quart brine
  • 1 apple, halved and cored
  • 1 onion, halved and peeled
  • 2 mandarins, whole; or 1 orange, halved and seeded
Steps
  1. Brine the turkey overnight or for several days in advance of roasting.
  2. Transfer turkey and brine to roaster, arrange remaining ingredients around roasting pan. Cover with lid (or foil). Set roaster to 375°F and cook 15 minutes per pound. Allow an additional hour for resting and carving before service.
