Tuscan Kale Soup with White Beans (Vegetarian)
Ingredients
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried rosemary
  • ¼ tsp dried thyme
  • ¼ tsp red pepper flakes
  • 2 bay leaves
  • 14 oz canned diced tomatoes, with juices
  • 3 cups white kidney beans, drained and rinsed
  • 4 cups vegetable broth, can sub. with chicken broth if not vegetarian
  • 4 cups kale, roughly chopped
  • ½ lemon juiced
  • chopped Italian parsley, for topping
  • grated parmesan cheese, for topping
  • crusty bread, for serving
