Mom’s Turkey Stroganoff - M

Ingredients
  • 1 lb ground turkey, 97 to 99% lean
  • 1 can (10.5 oz) cream of chicken, healthy request (5fp)
  • 1 cup 0% plain yogurt
  • Mushrooms (optional)
  • Soy sauce (if using mushrooms)
  • 1 10 oz bag Carba Nada Noodles (20fp)
Steps
  1. In a nonstick pot, brown the turkey.  Use a wooden spoon to break up the meat as it browns. Season with a little salt if you want.
  2. Rinse and drain mushrooms. In a skillet Sauté the mushrooms with a tablespoon or two of soy sauce. Cook and stir about 5 minutes. (This can be done while the turkey is browning).
  3. When the mushrooms and turkey are both done, turn off both burners. Add the mushrooms to the turkey. Add a can of cream of chicken soup to the pot. Turn on low heat and stir to mix.
  4. Get out another pot for the noodles. Add about 8 cups of water. (Enough to cover the noodles).  Place over high heat and bring to a boil. When boiling add the noodles. Once the water boils again begin timing for 3 minutes. If it takes awhile for the water to boil, the noodles may be done in less than 3 minutes.
  5. While noodles are cooking add 1 cup yogurt to the turkey mixture and heat gently.
  6. When noodles are done, drain them in a colander then stir into the turkey pot.
