Frosted Cinnamon Muffin in a Mug THM-S

  • Every time I have this snack I can’t help but share it again... I am compelled to spread the love since keeping this sort of delight to myself seems awfully miserly. Smacking my lips after enjoying this muffin with a cup of coffee for my afternoon snack… can life get any better!!!???? The recipe is on page 257 of Trim Healthy Mama but here are my recent tweaks with the yummy frosting recipe added. - Pearl

  • Ingredients: golden flax meal * optional almond flour * egg * cinnamon * baking powder * coconut oil (or butter) * water * THM Sweet Blend or THM Pure Stevia Extract Powder (or any on plan sweetener)

  • Crack 1 egg into a coffee mug and whisk it well with a fork
  • Add 3 Tbs. Golden Flax meal or 2 Tbs. Golden Flax Meal and 1 Tbs. Almond flour
  • Add 1 scant Tbs. cinnamon
  • Add 1 flat Tbs. coconut oil (or butter)
  • Add 1 Tbs. water
  • Add 2 to 3 tsp. of THM Sweet Blend or 2 to 4 doonks (⅓2 tsp.) THM Pure Stevia Extract Powder. If you want to use Truvia or Xylitol try about 4 tsp.
  • Add ½ tsp. baking powder (I use aluminum free)
  • Stir vigorously until very well combined then nuke for 1 minute or bake at 350 in a ramekin for 10 to 15 minutes or until done (or cook in a waffle iron). You can also use a muffin tray and fill two holes to make two medium muffins out of this mix. Pour water into the rest of the holes and this helps steam the muffin - yum!
