Use this recipe for:
pasta sauce

eggplant casserole
bean "meat" balls
stuff peppers
spaghetti squash
lentil bolognese

Try Mary's mini with potato as starch & this soup, w/ cash/beans replaced w/ potato flakes; the soup thickens.
Ingredients
  • 2 - 14.5 oz cans of no salt added diced tomatoes (or 4 to 5 large ripe tomatoes)
  • 1 cup vegetable broth
  • ½ cup raw cashews (or ½ cup white beans)
  • 1 to 2 pitted dates
  • 2 cloves of garlic minced OR powder
  • 1 small red onion chopped OR powder
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 3 tbsp nutritional yeast
  • 1 tsp miso (or more to taste)
  • Black pepper to taste
  •  
  • Top with extra chopped fresh basil
