IP - Chili
Hearty, thick, red chili

Ingredients
  • 3 cups dried pinto beans
  • 6 cups water
  • 1 tab olive oil
  • 3 lbs ground meat (half pork is best)
  • 1 huge onion, diced
  • 1 huge can diced tomatoes (102 oz food service size)
  • 1 cup Williams Original Chili Seasonings
  • ΒΌ cup tomato powder
  • 2 tab salt
  • 2 tsp red pepper powder (halve this for sensitive pallets)
  • 1 tsp cinnamon
Steps
  1. Cook dried (unsoaked) pinto beans with water in Instant Pot, 35 minutes on high pressure, and drain when done.
  2. Cook ground meat in olive oil.
  3. Add onions and cook partially through.
  4. Add undrained can of diced tomatoes.
  5. Add chili seasonings, tomato powder, salt, red pepper and cinnamon.
  6. Cook on low, stirring until well mixed.
  7. Taste and add additional seasonings.
  8. Add drained pinto beans.
  9. Cook on low until heated.
  10. Re-taste and add additional salt if needed.
  11. Serve topped with shredded cheese, sour cream, diced onions and/or jalapenos.
