  • 1 ½ cups canned coconut milk
  • 1 Tbsp red curry paste
  • ¼ cup cilantro, packed
  • 8 to 10 fresh mint leaves
  • ¼ tsp salt
  • ½ cup macadamia Nuts
  • 2 Tbsp fresh lime juice
  • 2 to 3 green onions, roughly chopped
